From Hearth and Oven to Table
Do you want to learn how to cook in a fireplace? What about in an historic beehive oven? Prepare, cook and enjoy savory and sweet dishes under the guidance of experienced open hearth and beehive oven cooks. The class will be held in the historic cookhouse of the Compass Inn Museum where participants will participate in the process and assist the cooks in the tasks at hand. Participants will experience a variety of cookery techniques and enjoy discussions about 18th and early 19th century food preparation, preservation technology, seasonality, diet, and the availability of local and imported foodstuffs all while cooking scrumptious food that features receipt (recipes) and ingredients inspired by the cuisine of the 18th and 19th century. Once the meal is ready, they will sit down to enjoy the fruits of their labor in the museum’s candlelit warming kitchen. Wear comfortable closed-toe shoes, as they’ll be standing and doing a little bit of heavy lifting. They may also want to bring along an apron, their own knife, and paper and pencil for taking notes.
